Turkish Red Pepper-Walnut Spread
Known as muhammara, this flavorful Turkish spread is wonderful slathered on triangles of pita bread. Using roasted red peppers from a jar saves time, but you can certainly roast fresh ones if you are so inclined.
2 jarred roasted red peppers, drained
3/4 cup walnuts
1 garlic clove, halved
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon hot red pepper flakes
1/2 teaspoon ground cumin
Salt
1 tablespoon minced fresh parsley
Combine the roasted peppers, walnuts, and garlic in a food processor and process until smooth. Add the olive oil, lemon juice, hot red pepper flakes, cumin, and salt to taste, and process until smooth and creamy. Transfer to a small bowl and sprinkle with parsley. Refrigerate until ready to serve.
Makes about 2 cups
